Crispy, golden zucchini fritters made in the air fryer with minimal oil. A healthy and delicious way to enjoy summer squash.

Ingredients

  • 2 medium zucchinis, grated (~2½ cups)

  • 2 large eggs

  • ¼ cup all-purpose flour (or GF alternative)

  • ⅓ cup grated Parmesan cheese

  • 2 green onions, sliced

  • 1 clove garlic, minced

  • ½ tsp salt (plus more to taste)

  • Black pepper to taste

  • Optional: 1 tbsp fresh herbs (dill, parsley)

Instructions

  • Grate zucchini and salt. Let sit 10–15 minutes, then squeeze out moisture.

  • Mix zucchini with eggs, flour, cheese, onion, garlic, and seasonings.

  • Preheat air fryer to 375°F and lightly grease the basket.

  • Form batter into small patties. Place in a single layer in air fryer.

  • Air fry 10–12 minutes, flipping halfway, until golden and crisp.

  • Serve warm with your favorite dip.

Notes

To reheat, return to air fryer for 3 minutes. Freeze cooked fritters for up to 2 months.
