Crispy, golden zucchini fritters made in the air fryer with minimal oil. A healthy and delicious way to enjoy summer squash.
2 medium zucchinis, grated (~2½ cups)
2 large eggs
¼ cup all-purpose flour (or GF alternative)
⅓ cup grated Parmesan cheese
2 green onions, sliced
1 clove garlic, minced
½ tsp salt (plus more to taste)
Black pepper to taste
Optional: 1 tbsp fresh herbs (dill, parsley)
Grate zucchini and salt. Let sit 10–15 minutes, then squeeze out moisture.
Mix zucchini with eggs, flour, cheese, onion, garlic, and seasonings.
Preheat air fryer to 375°F and lightly grease the basket.
Form batter into small patties. Place in a single layer in air fryer.
Air fry 10–12 minutes, flipping halfway, until golden and crisp.
Serve warm with your favorite dip.
To reheat, return to air fryer for 3 minutes. Freeze cooked fritters for up to 2 months.
