Soft, fluffy pancakes made with ripe bananas and simple pantry ingredients for a classic breakfast.
2 ripe bananas, mashed
2 large eggs
1 cup milk
2 tbsp melted butter or oil
1 tsp vanilla extract (optional)
1 ½ cups all-purpose flour
2 tsp baking powder
1 tbsp sugar
¼ tsp salt
Mash bananas in a bowl until mostly smooth.
Whisk in eggs, milk, butter, and vanilla.
Stir in dry ingredients until just combined.
Heat a greased skillet over medium heat.
Pour batter and cook until bubbles form.
Flip and cook until golden.
Riper bananas add more sweetness. Serve with fruit or syrup.
