Blueberry Lemon Cottage Cheese Pancake Bites are fluffy, protein-packed mini muffins perfect for breakfast or snack. Bright lemon flavor and juicy blueberries in every bite!
1 cup cottage cheese
2 large eggs
¼ cup maple syrup or honey
1 tsp vanilla extract
1 tsp lemon zest
½ cup oat flour or almond flour
1 tsp baking powder
Pinch of salt
½ cup fresh or frozen blueberries
Optional: extra blueberries for topping
Preheat oven to 350°F. Grease a mini muffin tin or use silicone liners.
Blend cottage cheese, eggs, maple syrup, vanilla, and lemon zest until smooth.
In a bowl, whisk flour, baking powder, and salt.
Add wet mixture to dry and stir to combine.
Gently fold in blueberries.
Spoon batter into muffin cups, filling ¾ full.
Bake 15–18 minutes until golden and set.
Cool before serving.
