Hearty, cheesy potato burritos filled with creamy mashed potatoes, melted cheese, and crispy tater tots. The ultimate comfort food, ready in under an hour.
2 lbs russet potatoes, peeled and cubed
2 tbsp butter
½ cup sour cream (or Greek yogurt)
¼ cup milk
1½ cups shredded cheddar cheese
1 tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Pinch of paprika
2–3 cups frozen tater tots, baked or air-fried until crispy
6–8 large flour tortillas (10–12 inch)
Optional: green onions, hot sauce, salsa
Boil potatoes until fork-tender, about 10–12 minutes. Drain.
Mash with butter, sour cream, milk, cheese, and seasonings. Mix until creamy.
Bake or air fry tater tots until crispy.
Warm tortillas. Spread mashed potatoes down center of each tortilla.
Top with crispy tots and extra cheese or hot sauce.
Roll tightly, folding in sides.
Toast in skillet if desired for a crispy finish.
