Juicy chicken breasts rolled with sweet caramelized onions and melty cheese, then baked to perfection for a comforting, oven-ready dinner that feels indulgent but is simple to make.
4 boneless, skinless chicken breasts
2 large yellow onions, thinly sliced
1 tbsp olive oil + 1 tbsp butter (for onions)
1 tsp balsamic vinegar (optional)
¾ cup shredded mozzarella (or mix of cheeses)
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp Italian seasoning
Optional: ½ cup panko or seasoned breadcrumbs
Olive oil or melted butter for brushing
Caramelize onions in olive oil and butter over medium heat for 25–30 minutes. Add balsamic if using. Set aside to cool.
Pound chicken breasts to ¼” thickness. Season with salt, pepper, garlic powder, and herbs.
Spread each with 2 tbsp onions and 2–3 tbsp cheese. Roll tightly and secure with toothpicks.
(Optional) Roll in breadcrumbs.
Sear in skillet or bake directly in greased dish.
Bake at 375°F for 25–30 minutes until cooked through. Let rest before slicing.
Prep ahead and bake when ready.
