Juicy chicken breasts rolled with sweet caramelized onions and melty cheese, then baked to perfection for a comforting, oven-ready dinner that feels indulgent but is simple to make.

Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 large yellow onions, thinly sliced

  • 1 tbsp olive oil + 1 tbsp butter (for onions)

  • 1 tsp balsamic vinegar (optional)

  • ¾ cup shredded mozzarella (or mix of cheeses)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning

  • Optional: ½ cup panko or seasoned breadcrumbs

  • Olive oil or melted butter for brushing

Instructions

  • Caramelize onions in olive oil and butter over medium heat for 25–30 minutes. Add balsamic if using. Set aside to cool.

  • Pound chicken breasts to ¼” thickness. Season with salt, pepper, garlic powder, and herbs.

  • Spread each with 2 tbsp onions and 2–3 tbsp cheese. Roll tightly and secure with toothpicks.

  • (Optional) Roll in breadcrumbs.

  • Sear in skillet or bake directly in greased dish.

  • Bake at 375°F for 25–30 minutes until cooked through. Let rest before slicing.
