2 cups canned chickpeas drained and rinsed
1 ripe avocado diced
1 cup cherry tomatoes halved
1 cup diced cucumber
1/4 cup finely chopped red onion
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Rinse and drain chickpeas thoroughly.

  • Combine chickpeas, tomatoes, cucumber, and red onion in a bowl.

  • Add diced avocado and feta.

  • Whisk olive oil, lemon juice, salt, and pepper.

  • Pour dressing over salad and toss gently.

  • Garnish with parsley and serve.

Notes

Add avocado just before serving for best texture.
Adjust lemon and salt to taste.
Store without avocado for longer freshness.
