2 tablespoons olive oil
2 cloves garlic minced
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 to 4 large eggs
1 cup fresh spinach optional
1 tablespoon fresh lemon juice
Optional feta or parsley for garnish

Instructions

  • Rinse and dry chickpeas thoroughly.

  • Heat olive oil in skillet over medium heat.

  • Cook chickpeas 5 to 7 minutes until lightly crisp.

  • Add garlic, paprika, salt, and pepper.

  • Stir in spinach if using and wilt.

  • Create spaces and crack eggs into skillet.

  • Cook until whites are set.

  • Squeeze lemon juice on top and garnish before serving

Notes
