Ingredients

  • 3 cups cooked chicken, shredded or cubed

  • 34 cups cooked low-carb vegetables (broccoli, cauliflower, spinach)

  • 2 tbsp butter

  • 1 small onion, finely diced (optional)

  • 2 garlic cloves, minced

  • 4 oz cream cheese

  • ½ cup heavy cream

  • ¼ cup chicken broth

  • 1 tsp Dijon mustard (optional)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper to taste

  • 2 cups shredded cheddar cheese (divided)

Instructions

  • Preheat oven to 375°F. Grease a 9×13 casserole dish.

  • Sauté onion and garlic in butter. Add cream cheese, cream, broth, mustard, and seasonings. Stir until smooth. Add 1 cup shredded cheese and melt.

  • In a large bowl, mix chicken, vegetables, and sauce. Pour into casserole dish.

  • Top with remaining cheese and bake uncovered for 20–25 minutes.

  • Let rest 5 minutes before serving.

  • Use rotisserie chicken for quicker prep.

  • Freeze before or after baking for meal prep.
