2 boneless chicken breasts
Salt, pepper, paprika
2 tbsp olive oil
2 tbsp sun-dried tomato oil
1 shallot, minced
3 garlic cloves, minced
⅓ cup chopped sun-dried tomatoes
2½ cups chicken broth
8 oz pasta (penne or rigatoni)
1 tsp Italian seasoning
¼ tsp red pepper flakes
½ cup heavy cream
½ cup grated Parmesan
Optional: 1–2 cups spinach or basil
Season and sear chicken in oil, 4–5 min per side. Set aside.
In same pan, sauté shallot, garlic, and sun-dried tomatoes in tomato oil.
Add broth, pasta, and seasonings. Simmer 10–12 min, stirring often.
Stir in cream and Parmesan until creamy. Add sliced chicken back.
Add spinach or basil if using. Rest 2–3 min before serving.
Use freshly grated cheese for best melting. Add lemon zest for brightness or mushrooms for a twist.
