Tender chicken and pasta tossed in a creamy sun-dried tomato and Parmesan sauce — this one-skillet “Marry Me Chicken Pasta” is bold, rich, and ready in under 45 minutes.

Ingredients

  • 2 boneless chicken breasts

  • Salt, pepper, paprika

  • 2 tbsp olive oil

  • 2 tbsp sun-dried tomato oil

  • 1 shallot, minced

  • 3 garlic cloves, minced

  • ⅓ cup chopped sun-dried tomatoes

  • 2½ cups chicken broth

  • 8 oz pasta (penne or rigatoni)

  • 1 tsp Italian seasoning

  • ¼ tsp red pepper flakes

  • ½ cup heavy cream

  • ½ cup grated Parmesan

  • Optional: 1–2 cups spinach or basil

Instructions

  • Season and sear chicken in oil, 4–5 min per side. Set aside.

  • In same pan, sauté shallot, garlic, and sun-dried tomatoes in tomato oil.

  • Add broth, pasta, and seasonings. Simmer 10–12 min, stirring often.

  • Stir in cream and Parmesan until creamy. Add sliced chicken back.

  • Add spinach or basil if using. Rest 2–3 min before serving.

Notes

Use freshly grated cheese for best melting. Add lemon zest for brightness or mushrooms for a twist.
