Creamy Tuscan Salmon is a rich, elegant one-skillet meal perfect for Valentine’s Day or any special dinner. Seared salmon fillets simmer in a garlicky, Parmesan cream sauce with sun-dried tomatoes and spinach.
4 salmon fillets
1 tbsp olive oil
1 tbsp butter
3 garlic cloves, minced
½ cup sun-dried tomatoes, sliced
1 cup heavy cream
½ cup Parmesan cheese, grated
1 tsp Italian seasoning
¼ tsp red pepper flakes (optional)
2 cups baby spinach
Salt and black pepper to taste
Optional: lemon juice or zest
Season salmon with salt and pepper. Sear in oil and butter over medium-high heat for 4–5 minutes per side. Set aside.
Lower heat. Sauté garlic, then sun-dried tomatoes.
Add cream, Parmesan, and seasoning. Simmer until slightly thickened.
Stir in spinach. Return salmon to pan and simmer 2–3 minutes.
Taste and adjust seasoning. Add lemon if desired. Serve warm.
Use freshly grated Parmesan and avoid boiling cream. Serve with pasta, rice, or crusty bread.
