Crispy zucchini fritters are golden, savory patties made from grated zucchini, herbs, and cheese—pan-fried to crunchy perfection and ideal for dipping or serving as a light meal.

Ingredients

  • 2 medium zucchini, grated

  • 2 eggs, beaten

  • 1/3 cup all-purpose flour (plus more if needed)

  • 2 scallions, finely chopped

  • 1 garlic clove, minced

  • 2 tbsp fresh herbs (parsley, dill, or mint)

  • 1/4 cup crumbled feta or Parmesan (optional)

  • Salt and black pepper to taste

  • Olive oil for frying

Instructions

  • Grate zucchini, sprinkle with salt, and let sit for 10 minutes.

  • Squeeze out excess moisture using a clean towel.

  • In a bowl, mix zucchini, eggs, flour, scallions, garlic, herbs, and cheese (if using).

  • Heat olive oil in a skillet over medium heat.

  • Drop spoonfuls of batter into the pan and flatten gently.

  • Cook 3–4 minutes per side until golden and crisp.

  • Drain on paper towels and serve warm with dipping sauce.
