2 medium zucchini, grated
2 eggs, beaten
1/3 cup all-purpose flour (plus more if needed)
2 scallions, finely chopped
1 garlic clove, minced

1/4 cup crumbled feta or Parmesan (optional)
Salt and black pepper to taste
