Creamy, garlicky, and loaded with parmesan, this one-pot chicken pasta is an easy and flavorful dinner that’s ready in about 30 minutes.
1 lb boneless skinless chicken breasts or thighs, diced
2 tbsp olive oil
2 tbsp butter (plus more as needed)
3–4 garlic cloves, minced
2 cups chicken broth
1 cup heavy cream or half-and-half
8 oz pasta (penne, rotini, or bowtie)
¾ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and black pepper to taste
Red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Heat oil and butter in a large skillet. Add chicken, season, and cook until golden. Remove and set aside.
Add garlic to pan and sauté until fragrant.
Pour in broth and cream. Bring to a simmer.
Stir in pasta. Cook 10–12 minutes, stirring occasionally, until pasta is tender.
Add Parmesan and cooked chicken. Stir until creamy and heated through.
Garnish with parsley and serve.
Add steamed spinach or broccoli at the end for extra vegetables.
Use half-and-half or milk for a lighter version.
Reheats well with a splash of cream or broth.
