This one-pan garlic Parmesan chicken and potatoes recipe features crispy roasted potatoes and juicy chicken, tossed in a garlicky herb-Parmesan blend and baked until golden perfection.

Ingredients

  • lbs chicken thighs or breasts (boneless or bone-in)

  • lbs baby potatoes, halved

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1½ teaspoons Italian seasoning

  • 1 teaspoon paprika (optional)

  • Salt and black pepper to taste

  • Optional: Fresh parsley and extra Parmesan for garnish

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet or grease a 9×13 baking dish.

  • In a large bowl, toss chicken and potatoes with olive oil, garlic, Parmesan, herbs, salt, pepper, and paprika.

  • Arrange in a single layer on the pan, placing potatoes cut-side down.

  • Roast for 35–40 minutes, or until chicken is cooked and potatoes are golden. Broil 2–3 minutes for extra crispness.

  • Rest 5 minutes, then serve garnished with parsley and more Parmesan.

Notes

  • Use skin-on chicken for extra flavor

  • Add green beans or broccoli halfway through roasting
