Seasoned Greek-style meatballs served over grains with fresh vegetables and yogurt sauce.
1 lb ground lamb or beef
½ cup breadcrumbs
¼ cup milk
1 large egg
¼ cup grated onion
2 cloves garlic, minced
2 tbsp chopped parsley
1 tsp dried oregano
Salt and black pepper to taste
Olive oil for cooking
For the bowl:
3 cups cooked rice or grains
Chopped cucumber, tomato, red onion
Olives (optional)
For the sauce:
1 cup Greek yogurt
½ cup grated cucumber
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
Salt to taste
Mix meatball ingredients gently and shape into balls.
Pan-cook meatballs in olive oil until browned and cooked through.
Prepare grains and sauce while meatballs cook.
Assemble bowls with grains, meatballs, vegetables, and sauce.
Meatballs can be baked instead of pan-cooked. Serve with pita if desired.
