A light, comforting broth made with fresh ginger, garlic, and tender rice noodles. Simple, warming, and perfect for a soothing meal.

Ingredients

6 cups vegetable or chicken broth
1½ tbsp fresh ginger, sliced or lightly crushed
4 cloves garlic, minced
2 tsp soy sauce or tamari
½ tsp sesame oil
4 oz rice noodles
2 green onions, sliced
1 tsp neutral oil

Instructions

  • Gently sauté garlic and ginger in oil until fragrant.

  • Add broth and simmer for 15–20 minutes.

  • Stir in soy sauce and sesame oil.

  • Add rice noodles and cook until tender.

  • Add optional vegetables or protein if using.

  • Serve hot, topped with green onions.

Notes

Store broth and noodles separately for best texture. Adjust ginger and garlic to taste.
