A light, comforting broth made with fresh ginger, garlic, and tender rice noodles. Simple, warming, and perfect for a soothing meal.
6 cups vegetable or chicken broth
1½ tbsp fresh ginger, sliced or lightly crushed
4 cloves garlic, minced
2 tsp soy sauce or tamari
½ tsp sesame oil
4 oz rice noodles
2 green onions, sliced
1 tsp neutral oil
Gently sauté garlic and ginger in oil until fragrant.
Add broth and simmer for 15–20 minutes.
Stir in soy sauce and sesame oil.
Add rice noodles and cook until tender.
Add optional vegetables or protein if using.
Serve hot, topped with green onions.
Store broth and noodles separately for best texture. Adjust ginger and garlic to taste.
