A bright, comforting lentil soup infused with turmeric, ginger, and fresh lemon. Light, warming, and perfect for nourishing meals.
1 cup red or yellow lentils, rinsed
1 small onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tsp ground turmeric
1 tsp ground cumin
5 cups vegetable broth
2 tbsp olive oil
1 lemon, zested and juiced
Salt and black pepper, to taste
Optional: carrots, celery, spinach, or kale
Sauté onion in olive oil until soft.
Add garlic, ginger, turmeric, and cumin; cook briefly.
Add lentils and broth. Bring to a boil.
Simmer 20–25 minutes until lentils are tender.
Season with salt and pepper.
Stir in lemon zest and juice.
Serve hot.
Blend partially for a creamier texture. Add greens at the end for extra color and nutrients.
