Dough:

2 tbsp unsalted butter or coconut oil
1 tbsp coconut sugar
Pinch salt
½ tsp vanilla extract
½ cup all-purpose flour
1 egg
Cinnamon Sugar Coating:
¼ cup coconut or cane sugar
1½ tsp cinnamon
Olive oil spray or melted butter
