2 cups elbow macaroni
2 cups fresh broccoli florets chopped small
2 cups low-sodium vegetable or chicken broth
1 cup milk
1 1/2 cups shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional 2 tablespoons Greek yogurt
Combine pasta, broth, milk, and salt in a large pot.
Bring to a gentle boil, stirring frequently.
Add broccoli once pasta begins to soften.
Cook 8 to 10 minutes until pasta is tender and liquid mostly absorbed.
Reduce heat and stir in cheddar and Parmesan until melted.
Add garlic powder and pepper.
