Healthy One Pot Broccoli Mac & Cheese combines tender pasta and fresh broccoli in a creamy, lighter cheese sauce made entirely in one pot for a wholesome comfort meal.

Ingredients

2 cups elbow macaroni
2 cups fresh broccoli florets chopped small
2 cups low-sodium vegetable or chicken broth
1 cup milk
1 1/2 cups shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional 2 tablespoons Greek yogurt

Instructions

  • Combine pasta, broth, milk, and salt in a large pot.

  • Bring to a gentle boil, stirring frequently.

  • Add broccoli once pasta begins to soften.

  • Cook 8 to 10 minutes until pasta is tender and liquid mostly absorbed.

  • Reduce heat and stir in cheddar and Parmesan until melted.

  • Add garlic powder and pepper.

  • Stir in Greek yogurt if desired.

  • Let thicken slightly before serving.

Notes
