Juicy chicken, creamy orzo, and tangy sun-dried tomatoes all simmered in a rich Parmesan sauce — this one-pot Marry Me Chicken Orzo is the perfect blend of cozy and elegant.
2 chicken breasts (or 4 small thighs)
Salt, pepper, paprika to season
2 tbsp olive oil
2 tbsp chopped sun-dried tomatoes (in oil)
1 shallot, minced
3 garlic cloves, minced
1 cup orzo pasta
2½ cups chicken broth
1 tsp fresh thyme or ½ tsp dried
½ cup heavy cream
½ cup grated Parmesan
Optional: ¼ tsp red pepper flakes
Optional: 1–2 cups spinach or basil
Season and sear chicken in oil until golden on both sides. Set aside.
Sauté sun-dried tomatoes, shallot, and garlic until fragrant.
Stir in orzo, broth, herbs, salt, and pepper. Simmer 8–10 minutes.
Add cream, Parmesan, and red pepper flakes. Stir until smooth.
Return chicken to pan. Cover and cook 5–7 minutes until chicken is done.
Stir in spinach or basil if using. Let rest before serving.
For extra richness, add a splash of white wine. Use fresh grated cheese for best melting.
