Juicy chicken, creamy orzo, and tangy sun-dried tomatoes all simmered in a rich Parmesan sauce — this one-pot Marry Me Chicken Orzo is the perfect blend of cozy and elegant.

Ingredients

  • 2 chicken breasts (or 4 small thighs)

  • Salt, pepper, paprika to season

  • 2 tbsp olive oil

  • 2 tbsp chopped sun-dried tomatoes (in oil)

  • 1 shallot, minced

  • 3 garlic cloves, minced

  • 1 cup orzo pasta

  • 2½ cups chicken broth

  • 1 tsp fresh thyme or ½ tsp dried

  • ½ cup heavy cream

  • ½ cup grated Parmesan

  • Optional: ¼ tsp red pepper flakes

  • Optional: 1–2 cups spinach or basil

Instructions

  • Season and sear chicken in oil until golden on both sides. Set aside.

  • Sauté sun-dried tomatoes, shallot, and garlic until fragrant.

  • Stir in orzo, broth, herbs, salt, and pepper. Simmer 8–10 minutes.

  • Add cream, Parmesan, and red pepper flakes. Stir until smooth.

  • Return chicken to pan. Cover and cook 5–7 minutes until chicken is done.

  • Stir in spinach or basil if using. Let rest before serving.

Notes

For extra richness, add a splash of white wine. Use fresh grated cheese for best melting.
