1 lb ground beef
3 cups diced potatoes (Yukon gold or red)
1 small onion, diced
2 cloves garlic, minced
1 1/2 cups shredded cheddar cheese
2 tbsp oil (olive or canola)
1 tsp smoked paprika
1/2 tsp oregano
Salt & pepper, to taste
Optional: chili flakes, mozzarella, green onions, parsley
