2 medium sweet potatoes, diced
12–14 oz smoked sausage, sliced
1 red onion, chopped (optional)
3 tbsp honey
2 cloves garlic, minced
1 tbsp Dijon mustard
2 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp paprika or red pepper flakes (optional)
Preheat oven to 425°F and line a large sheet pan.
Mix glaze ingredients in a bowl: honey, garlic, mustard, oil, salt, pepper, paprika.
Toss sweet potatoes and sausage with glaze.
