One Pot Chicken Shawarma Rice combines tender spiced chicken and fluffy rice cooked together in one pan for a flavorful and convenient Middle Eastern-inspired meal.

Ingredients

1 1/2 pounds boneless skinless chicken thighs
1 1/2 cups basmati rice
2 tablespoons olive oil
1 medium onion diced
3 cloves garlic minced
1 tablespoon tomato paste
2 1/2 cups chicken broth
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
2 tablespoons chopped parsley

Instructions

  • Mix spices and coat chicken evenly.

  • Sear chicken in olive oil until golden and set aside.

  • Sauté onion and garlic in same pot.

  • Stir in tomato paste and rice.

  • Add broth and return chicken to pot.

  • Cover and simmer 18 to 20 minutes.

  • Rest covered for 5 minutes.

  • Fluff rice, slice chicken, add lemon juice and parsley, and serve.

Notes

Marinate chicken for extra flavor if time allows.
Use low heat to prevent rice from burning.
Serve with yogurt sauce if desired.
