Crispy, cheesy quesadillas stuffed with smashed burger patties, onions, and classic burger sauce—ready in under 30 minutes.
½–¾ lb ground beef (80/20)
½ small onion, thinly sliced
1 cup shredded cheddar cheese
2 flour tortillas (8-inch)
1 tbsp olive oil or butter
Salt & pepper
Smash Sauce:
¼ cup mayo
1 tbsp ketchup
1 tsp mustard
1 tsp pickle juice
Pinch garlic powder (optional)
Make burger sauce and chill.
Sauté onions until soft. Set aside.
Divide beef into 4 small balls. Smash and cook in a hot skillet until crisp and browned. Season with salt and pepper.
Spread sauce on half of each tortilla. Layer cheese, beef, onions, pickles (optional), and more cheese. Fold in half.
Cook quesadillas in a skillet until golden and crispy on both sides.
Slice and serve with extra sauce.
Use plant-based beef for a vegan version.
Don’t overfill to avoid tearing tortillas.
Add bacon, jalapeños, or extra cheese as desired.
