Warm and nourishing baked oatmeal made vegan with plant-based milk, flaxseed, and maple syrup. Customizable with fruit, nuts, or chocolate — perfect for breakfast or meal prep.

  • 2 cups rolled oats

  • 1 tbsp ground flaxseed + 3 tbsp water (flax egg)

  • 1¼ cups plant-based milk

  • ½ cup mashed banana or applesauce

  • ¼ cup maple syrup

  • 2 tbsp melted coconut oil or applesauce

  • 1 tsp vanilla extract

  • 1½ tsp baking powder

  • 1 tsp cinnamon

  • ¼ tsp salt

  • ½ cup mix-ins (berries, nuts, chocolate chips, etc.)

Instructions

  • Preheat oven to 375°F. Grease or line an 8×8-inch baking dish.

  • Mix flaxseed and water. Set aside to thicken.

  • In a bowl, whisk milk, banana, maple syrup, oil, vanilla, and flax egg.

  • Add oats, baking powder, cinnamon, and salt. Stir to combine.

  • Fold in mix-ins and pour into the dish. Top with extras.

  • Bake 35–40 minutes until golden and set.

  • Cool slightly before slicing. Serve warm or cold.

Notes

  • Store in fridge for up to 5 days.

  • Freeze in squares and reheat as needed.

  • Adjust sweetness and flavor with your favorite add-ins.
