Warm and nourishing baked oatmeal made vegan with plant-based milk, flaxseed, and maple syrup. Customizable with fruit, nuts, or chocolate — perfect for breakfast or meal prep.
2 cups rolled oats
1 tbsp ground flaxseed + 3 tbsp water (flax egg)
1¼ cups plant-based milk
½ cup mashed banana or applesauce
¼ cup maple syrup
2 tbsp melted coconut oil or applesauce
1 tsp vanilla extract
1½ tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup mix-ins (berries, nuts, chocolate chips, etc.)
Preheat oven to 375°F. Grease or line an 8×8-inch baking dish.
Mix flaxseed and water. Set aside to thicken.
In a bowl, whisk milk, banana, maple syrup, oil, vanilla, and flax egg.
Add oats, baking powder, cinnamon, and salt. Stir to combine.
Fold in mix-ins and pour into the dish. Top with extras.
Bake 35–40 minutes until golden and set.
Cool slightly before slicing. Serve warm or cold.
Store in fridge for up to 5 days.
Freeze in squares and reheat as needed.
